Authentic barrel-ripened feta is now only produced traditionally by a small handful of producers in Greece.
Each barrel is filled with curd by hand and carefully ripened. Once the cheese has been removed, each barrel is broken down, washed and rebuilt to continue the traditional cheese making method. Much Similar to wine, the feta ferments naturally from the barrel and draws its flavours from the wood.
